  • 500 g pearl couscous
  • 250 g cauliflower
  • 250 g broccoli
  • 1 ginger cube
  • 375 ml pineapple juice
  • 375 ml water
  • 1 chili pepper
  • 30 g shallot
  • garlic to taste
  • 30 g vegetable stock
  • olive oil
  • Fruit forest pepper
  • lime vinegar

Bring the water, the pineapple juice and the vegetable stock to the boil. When the water boils, add the pearl couscous and let simmer for another 12 minutes. When done, rinse with lukewarm water until cooled. Add olive oil and bring to taste with lime vinegar. Fry the shallots, chili pepper and garlic. Add the cauliflower and the ginger cube and let simmer until done. Season with salt and pepper. Mix the pearl couscous under the cauliflower and the broccoli. Season with Fruit forest pepper. Tip: garnish with scampi, shrimps, chorizo, shredded Ganda ham, feta cubes
